How to Spike Your Fish Effectively

• Locate the Brain: For most target fish, look for the soft spot slightly behind and above the eye. Alternatively, find the intersection where an imaginary line drawn up from the back of the eye meets a line running down the top of the fish's head.
• The Angled Entry: Don't push straight down. Position the sharp stainless-steel tip of your spike at the entry point and angle it slightly forward or backward towards the opposite eye to ensure you hit the brain core.
• Confirm the Spike: When you successfully target the brain, the fish will briefly flare its fins, shudder, and immediately go limp.
• Follow with an Ice Slurry: Spiking is only step one. For professional-grade fillets, immediately bleed the fish by cutting the gill arches, then drop it straight into a saltwater ice slurry.
